寒鰤 (寒ブリ) Kan buri tastes completely full of another flavor when compare with Hamachi. The greatest season to enjoy the freshness falls between December and March. Kan buri has not much in oil with wild taste mixed with sweet, but yet rich and fresh in taste. Toyama people said it’s a privilege to be served with Kan buri. The dish is equally good to be eaten in raw and cooked.
